Rabbits are animals seen only seasonally in the game, School of Dragons.
Description
Rabbits are small herbivorous mammals with powerful hindquarters, and are known for their hopping. A Bunny is the term for a baby rabbit. Rabbits are wild animals, but have been domesticated since the Roman Era. Most domesticated rabbits are derived from the European Rabbit (Oryctolagus cuniculus). Vikings would have come across this species in the Southern portions of Scandinavia. Contrary to popular belief, rabbits are not rodents, but rather belong to the Order Lagomorph along with Hares, and Pikas.
Rabbits (both wild and domestic) have a very sensitive gastrointestinal tract, and their diet must contain a large amount of fiber. They also need to eat fairly continuously or have increased risk of gut stasis, which is life-threatening. Based on their spine shape, rabbits are also prone to broken backs; care must be taken when handling them.
Function
Rabbits, both wild and domestic, were originally food animals and were raised and hunted as such. It is not a stretch to think that Dragons may also eat Rabbits. Their fur and hide are also highly sought after. In the game, School of Dragons, the player can acquire fur from their rabbits. These are presumably tufts of hair, and harvesting thereof is presented in a humane manner. Rabbits can also be kept as pets and can even be litter-trained, but this use of rabbits is not seen in the How to Train Your Dragon Franchise.

Rabbits are an animal the player can raise and harvest on their farms. Rabbits provide fur for the player to use to complete farm "Jobs" provided by Trader Johann. Rabbits are also a seasonal animal, only available for purchase around Easter time in the Spring.
Dragons: Rise of Berk
A rabbit toy is an item that can be found while searching with Toothless in order to complete collections during Easter.
Rabbits are also briefly mentioned during a quest.
