Dragonese is the language that the Dragons speak. Hiccup tries to train Toothless by speaking to him in Dragonese, but it doesn't really work any better than yelling at him.

The language and its mentions never appear in the movie. No viking has ever even tried to understand a dragon except Hiccup and, later, Alvin the Treacherous. The Wanderers can speak Dragonese.
